Cannabis Cuisine Part 5: Green Goddess Grilled Chicken

Hey folks! It’s time again for another blog post from Cobourg’s one and only locally owned cannabis retailer. Over the last couple of months, we’ve been looking at the edible side of cannabis, specifically how to infuse foods with the qualities of your strain of choice. We’ve also touched on a few recipes that best accompany the flavour of cannabis while giving you flexibility with your level of THC potency. This week, we’re going to be bringing the cannabis cuisine segment to a (temporary) end with a recipe designed to get you excited for summer. So, fire up that BBQ and let’s summon the sunshine with some Green Goddess Grilled Chicken!

What You Need

                For this dish, we’re going to be infusing the Green Goddess dressing using the cannabis oil that we made in a blog post a couple weeks ago. If you don’t remember how, check it out!

-          4 to 6 boneless, skinless chicken breasts (Although you can also use boneless chicken thighs, the choice is yours!)

-          2 Garlic cloves, peeled and sliced

-          1 cup of fresh basil, chopped

-          ¼ cup of chives, peeled and sliced

-          ½ cup of Greek yogurt

-          2 tbsp of lemon juice

-          ¼ cup of fresh dill, chopped

-          ½ tsp of salt

-          ½ tsp of black pepper

-          ½ cup of oil (of the Cannabis variety 😉)

-          ½ cup of mayonnaise

 How It’s Done

                First up, let’s make the Green Goddess dressing! Note: If you have a food processor I highly recommend blending the garlic, basil, chives, dill instead of grinding it by hand with a mortar and pestle.

-          Combine the blended garlic, basil, chives and dill with the yogurt, mayonnaise, lemon juice, salt and black pepper into a bowl, mix well before slowly adding the cannabis oil while continuing to mix. Adding the oil slowly will ideally prevent the sauce from separating and will maintain a creamy texture.

-          Separate the dressing into two equal bowls: one for marinating the chicken and one for pouring over the chicken once we’re finished grilling.

-          Now we’re going to take our chicken and add it to the marinade bowl, tossing gently to coat the chicken completely in the green goddess dressing

-          Now it’s time to get grillin’! Turn your BBQ or stove top grill on and set it to medium high heat.

-          Once you’ve got a hot grill, place your chicken upon the grill for about 12 minutes or so, turning once halfway through to get a lovely, golden-brown colour on each side. If you have access to a meat thermometer, make sure the meat is registering around 165 degrees. Or if you’re like me, cut into the thick part of the largest piece and pray to the gods of meat that your chicken is cooked.

-          Plate up your grilled chicken and pour some of the dressing overtop and voila! You’ve made a delicious and cannabis filled treat that tastes like summer.

And that’s all there is to it! A simple, delicious and potent edible dish that will make you the talk of the backyard BBQ scene….assuming that’s a thing.
